Spanish Cookie Recipes

The word cookie has been derived from a Dutch word 'koekje or koekie', and refers to small cake. Cookies can be of different shapes and sizes. Whether it's homemade or store-bought, cookies are absolutely delicious.

Cookies are luscious, whether coated with a sprinkle of colored sugar or frosted with icing. They can be served at any time of the day; during coffee breaks, as a snack or for dessert. Every country has at least one unique cookie recipe of its own. In Spain, cookies are commonly referred to as 'galletas'. Some of the toothsome Spanish cookie recipes are:

Recipe for Almond Spanish Cookies (Polvorones)
It is a delicious Spanish cookie recipe, commonly prepared during Christmas. These are soft cookies that almost melt in your mouth.

Ingredients

* All purpose flour - 1½ cups
* Lard - 1 cup
* White sugar - ¾ cup
* Almonds - ¾ cup
* Grounded cinnamon - ½ teaspoon
* Powdered sugar - ½ cup (optional)

Directions

1. Pour the flour onto a cookie sheet and place it in a preheated oven at 350ºF.
2. Periodically, move the flour around on the sheet, so that it toasts evenly. Leave it in the oven for 8 minutes and then set aside.
3. Similarly, place raw almonds on another cookie sheet and toast the almonds till their color slightly changes.
4. Remove the almonds and let them cool. Ground these almonds finely in a food processor.
5. Now, take a large mixing bowl and put cream lard, sugar and cinnamon in it. Add flour and grounded almonds; mix them well till it forms a dough.
6. On a flat surface, place a sheet of waxed paper. Press the dough on it and flatten it down up to ½ inch.
7. Use a cookie cutter to cut the dough into small cookies. Remove the cookies from the waxed paper with the help of a spatula, and place it on a cookie sheet for baking.
8. Bake the cookies for 25-30 minutes at 400ºF. Then, remove the cookie sheet from the oven and allow the cookies to cool down.
9. Dust the cookies with powdered sugar and serve.
Spanish Cookie Recipes
Spanish Peanut Cookies
This is another wonderful Spanish cookie recipe which is not too sweet and has a unique flavor.

Ingredients

* Flour - 1½ cups
* Brown sugar (firmly packed) - 1 cup
* Unsalted butter (softened) - 1 cup
* Baking powder - 1½ teaspoons
* Baking soda - 1 teaspoon
* Rolled oat - 1 cup
* Salted peanuts - 1 cup
* Flaked coconut - 1 cup
* Egg - 1
* Melted chocolate - ½ cup

Directions

1. Take a large mixing bowl and put flour, baking powder and baking soda in it. Mix them well and set aside.
2. Put butter and sugar in another bowl; add egg to it and beat well. Combine both the mixtures (1 & 2).
3. Now add oat, peanuts and coconut to the mixture; blend it well after each addition.
4. Drop the mixture on a cookie sheet with the help of a rounded teaspoon, and give it a desired shape
5. Bake it for 12-15 minutes at 350°F. After that, remove the cookie sheet from the oven and allow the cookies to cool.
6. Use pastry bag to pipe the melted chocolate in strips across the cookies, and make a big rosette in the middle to stick a peanut on top. Cookies are ready to serve.
Spanish Cookie Recipes
Pastissets (Powdered Sugar Cookies)
It is a delicate cookie having a distinct lemon flavor, from the Catalunya and Baleares region of Spain.

Ingredients

* Flour - 2 cups
* Lard or vegetable shortening - 2/3 cup
* Sugar - ½ cup
* Unsalted butter - 1/3 cup
* Lemon peel (grated) - ½ teaspoon
* Cinnamon - ¼ teaspoon
* Egg yolk - 1
* Confectioner's sugar - ¼ cup

Directions

1. Take lard and butter in a large bowl and beat it with a wooden spoon.
2. Add sugar, egg and lemon peel to the mixture, and mix well.
3. Take another bowl, put cinnamon and flour in it. Combine this mixture with the previously made mixture and form a smooth dough.
4. Roll the dough 1/4 inch thick on a floured surface, and cut with a 3-inch scalloped cookie cutter.
5. Place the cookies on the cookie sheet and bake it in a preheated oven at 350°F for 10 minutes, or till it turns golden.
6. Allow the cookies to cool down, coat it with confectioner's sugar and serve.
